Shit, Marc. Write a book about technique then. Must I do all the work around here?

Whoa. I think I just channeled MJ. Creepy...

What's so creepy about channeling the MJ? I think it would be a fantastic opportunity for the hoi polloi. I mean, think about it. Wow.

Marc, a few years ago, I was gifted with the book The Way To Cook and that's what it is, the way to cook. I really enjoy it. And if you wrote a technique book, I would buy it. Maybe two.

wow, mj. thank you; that's a lovely compliment. this member of the hoi polloi thanks you very much.

'the way to cook' is a great book, as it teaches some classic recipes along with techniques that julia demonstrates to great effect.

julia was an incredibly lovely person; i actually met her several times, and my 'mastering the art of french cooking' has her autograph along with a lovely dedication. she would cook with anyone who expressed an interest, and her appetite for life did not extend solely to food.

i am a big fan of her series with jacques pepin, and the accompanying cookbooks are excellent examples of teaching cooking technique as well. his 'fast food my way' is an excellent reference for all levels of cooks too.

i'm baking a variety of scones this week, and starting macerating dried fruit for fruitcakes. stay away from matches...

I was considering adding MtAoFC to my Christmas list...

I always enjoyed watching her shows and Jacques Pepin,, what can I say. He rocks. Sounds like I should add FFMW to my list..

I think he meant that I shouldn't wait for Christmas, that I should buy the books for myself.

OMG, I love them both! That would have been a great demo to witness!

Tell me, Marc. Do you ever watch the Bravo show, Top Chef? And if so, what do you think of it?

i used to watch top chef, but it's become too ridiculous over time, and the cooks they use in the show have become too stereotypical.

i'll always remember jacques pepin as the guy who got fried clams into howard johnsons across america.

tony bourdain is fun to drink with, thats for sure. i bought him several beers at a taqueria on south beach a couple of years ago...damned good tacos, too. beware the 'stupid' sauce.

i used to date michelle bernstein's sister (if you know who she is) for a bit, but she had the sense to marry someone else. michelle, now, is a tremendous cook, and has a great palate, but then, so too has her mother.

eric ripert is a master of seafood; he cooks at le bernardin in ny. i've eaten there many times.
