New Deli, Need Ideas

    oh, the Cafe is in Guilford CT, right off exit 59 from I95, in the Yale Medical Building. 111 Goose Lane is the address if anyone wants to go...Tom, I know you pass by this way sometimes, stop in!

    Don't forget good old stand-bys, like BLT's and those cool triple decker clubs sandwiches. It's nice to get all trendy and offer new stuff but don't forget the oldies but goodies.

    Thanks Marni - I just like reading, preparing and planning food (and eating it but I should do less of that I think)

    Oh and what MJ said - no spam, under any circumstances, never EVER EVER!

    What am I chopped liver, LOL btw one of the unhealthiest delicious sandwiches.

    Reubens go over big in my house....warm corned beef, swiss cheese, saurkraut and thousand Island dressing grilled on a good rye
    I make a chicken salad with tarragon, honey mustard mustard and mayo dressing ...makes a great sandwich!
    pulled pork is one of my favs or
    Vietnamese barbecued pork, sprinkled with shredded carrots, onions, jalapeños, and cilantro served on a French bread.

    If you do that then you will need some Spam recipes, LOL

    Ron, I didn't forget about you, you can come too!! I'll even give you the sandwich for free...well maybe 1/2 price :poke:

    A lot of people have suggested Reubens and I think that will be a special on the menu. My wife had her first day today and she said it went pretty good! The cafe had been closed for a while so she said a lot of people were excited about it re opening

    Sliced cucumbers, tomatoes and feta cheese,,,drizzled with olive oil and then sprinkled with dill or mint. Cram it into a toasted split pita bread. For variation can offer sliced black olives and/or humus on the side.

    I also would like to strongly suggest New Orleans Muffulettas Yum, yum. I bet they would be a hit up there. Place thinly sliced, hard Genoa salami, ham, mortadella, imported Swiss or provolone cheese on sub-like bread or use a whole French bread loaf and make a real big one. Top with olive salad and heat. Boscoli Italian olive salad is really good or you could make your own.

    Good luck with your deli. And here I thought, when I saw the header, you were gonna ask for places to visit when you visited New Deli. LOL, you traveler you.

    For years now, I've always judged a deli by the quality of their chicken salad sandwich. Preferably made with roasted chicken meat that was hand-pulled from the bone. And served on whole wheat, of course. I've always figured that the chicken salad was the best barometer for assessing a new deli.

    If you're trying to keep things on the healthy side, cut down on the mayo and maybe even serve it in a lettuce wrap. Lettuce wraps are becoming quite popular now.

    Just read this about local delis...

    Ex-PiPresser Scott Carlson, now with Finance and Commerce, reports on the sudden resurgence of deli restaurants in the Twin Cities, with Jason's Deli in a new building near the Eden Prairie Center planning as many as 10 stores in the metro not long after Mort's Deli opened in Golden Valley. Carlson notes that, "the restaurant chain’s biggest push to differentiate itself from competitors is its growing emphasis on fresh, healthy food. Food on the Jason’s menu is free of trans fats, high fructose corn syrup and MSG -- and those omissions are drawing attention for the company."

    My favorite,
    Rare roast beef, grilled eggplant(Aubergine) Tomato salsa & shaved Parmesan cheese on thick cut white crusty bread. Yum I'm salivating just thinking about it:cool:
