New Deli, Need Ideas

    My wife and I have been given the opportunity to take over the lease of a Cafe and we need some ideas for sandwich and salad specials. We'd like to have maybe 10 'special' sandwiches and maybe 5 salads, plus offer whatever else someone wants. The Cafe is in a hospital and so the food needs to be, for the most part, on the healthy side. Here's one of mine that we already made a special of at the deli I work at now...it's called the Chicken Milanese

    Grilled Chicken, Tomato, Red Onion, Fresh Basil, Olive Oil and Fresh Lemon Juice.

    It's basically chicken with a bruschetta mix on top and a little lemon juice. So lets hear it I know there are lots of cooks on here! You can name it too if you want!

    Anything with curry, mixed with grapes or apples. Either on salad greens or in a wrap. Forgot -- good luck on your venture!!!!

    Thanks Ann. Are you talking about maybe the Thai green curry? I've seen that sold here in stores. Smells good but I've never tried it

    I've never used that, either. Just the yellow curry like Spice Islands puts out. Some of it is so spicy hot that it turns a lot of people off. I use curry in deviled eggs, mixed with a little chutney run through a processor. It's also good with chopped chicken or crab mixed with chopped apple or halved grapes and some chutney and pecans. Now I'm getting hungry and I just ate dinner. Sheesh.

    After Dale's ultimate suggestion, you might not be looking for more.

    I used to own a natural food store where we made sandwiches. Unfortunately I didn't save the recipes that I developed and that was a long time ago. One that was very good was a Curried Tofu Salad Sandwich. Even non-tofu eaters loved it. It was much like a curried egg salad. Crumbled tofu (good quality, drained so it wasn't too wet), fine chopped celery, chopped cashews and a yellow India type curry. I think there was also some cinnamon and raisins. A little mayo to hold it together. And maybe some chopped apple.

    I'm trying to remember others, I'll post if they come to mind.

    Reubens are always wonderful if made correctly and I've always liked beef tongue
    sliced very, very thin and layered thick on rye. I can't eat all the spicy, curry stuff,
    so I look for good fresh meats and greens for lunch delights. Freshly baked breads
    for the sandwiches is always a good customer draw, especially whole wheat, rye and
    French bread. For salads, I always go for the loose leaf lettuces rather than the
    standard iceburg and then throw everything I've got in the veggie drawer in with them.
    I maybe too simple for this crowd though.

    These may be everywhere and now old hat, but my favorite sandwich at a small local deli is chicken caesar sandwich. Chicken breast with romaine lettuce, caesar dressing and shaved parmesan on a crusty french roll.

    Chinese Chicken salad. Lettuce, shredded chicken, crispy won tons, rice noodles, maybe some almond slivers & either a soy or ginger based dressing. Local places here, sell hundreds of pre-made salads....
    And, yes, I just made myself hungry!

    Smoked salmon, cream cheese, capers, red onion & dill

    Ham, swiss cheese & mustard

    Chicken, cottage cheese, cashews & lettuce

    Curried egg, red onion & lettuce with a dill mayo

    Red salmon, malt vinegar, red onion & lettuce

    Ploughmans - Roast beef (or ham), sharp cheddar, pickled onions on a rye

    Proscuttio, provolone cheese, marinated capsicum (bell peppers for you lot), marinated eggplant (aubergene for you lot) - toasted

    Rare roast beef, horseradish creme, potato salad & lettuce

    Greek Salad - cucumbers, lettuce, capsicum, black olives and fetta

    Chicken Ceaser - can do as a salad and a wrap

    Prawn (shrimp for you lot) Ceaser salad

    Wardorf Salad - chopped apples, celery, walnuts mixed together with a sour cream/mayo dressing

    Curried Pasta salad - bow tie shaped pasta (can do any shaped pasta), chopped capsicum, cooked bacon with a dressing made from lite cream, mustard and olive oil - make it when the pasta is hot and it serves great as a chilled pasta dish

    Cous Cous salad - cous cous made on stock rather than water (much tastier and just as easy to make up) mixed with anything really but common versions are - pistachio nuts, capsicum, sultanas

    Thai warm beef salad - lots of herbs and freshly grilled slices of steak

    Minute steak, caramelised onions, cheddar cheese melts - can do the same with a chicken fillet - mmmmm

    Tandoori chicken wraps - tandoori marinated chicken slices (cooked fresh can be done on a sandwich press easily), minted yoghurt, lettuce in a wrap

    The possibilities are endless ....

    You know what I really like from my favourite sandwich shop - all sandwiches come with a small red or green apple .... its a great way to encourage healthy eating and to clean the palate after eating ....

    How about stuffed potatoes (my favourite lunch options) - full cooked potatoes, cut and fill with different things - chicken, lettuce, avocado, satay sauce or homous, tabouli, cheese or ham, cheese, pineapple & sour cream, sour cream, chives and cheese or prawns in a seafood sauce, cheese, sour cream .... or you could do hot toppings - chicken curry, bolognaise sauce, taco style, chicken & corn .... really healthy options are cottage cheese, ham or chicken or prawns .... basically you just cook the potatoes - wrap in foil to keep warm or blitz in a microwave to get the heat back into them then add toppings from your existing salad/sandwich making area ... the hot sauces can be made ahead and portioned up for a quick reheat in the microwave ... to keep the hot toppings on top of the potato for ones like the taco style then put some corn chips standing up (stuck into the opened potato) to form a ring around the top - fill ring with the hot mix ....

    Wow Fiona, thank you for all the great ideas. I'll go over them with my wife but I do see some that stand out more than others like this one...
    Ploughmans - Roast beef (or ham), sharp cheddar, pickled onions

    abaxter (Angela right?) The bread will be delivered fresh daily from a bakery in New York, A&M Bronx Baking (They actually moved to Mount Vernon) It's the best bread around!

    Dale, what else would you put in the Spam Casserole? I'm definitely putting that on the menu and calling it 'Dale's Dreamy Delight' What do you think about that for a name!?!

    Marni, that's a good one, we serve that at the deli I work at now and everyone loves it. There's one lady that comes in and gets it with grilled chicken and croutons in a wrap, she swears by it!

    Karen, I'm definitely mentioning that to my wife...it sounds REAL good!

    Here's another one from the deli I work at now...it's the best seller.
    Chicken Cutlet, Roasted Red Peppers, Fresh Mozzarella, and Herb Mayonnaise...Here's a story behind the herb mayonnaise, the owner made it up right before he opened and it's a super hit, everyone loves it so he pitches the idea to Helmans and sends them a sample with a recipe. They write him back and tell him they don't like it and about 3 months later come out with 3 new 'flavors' of mayonnaise and one of them is herb. Boy was he LIVID!!

    Sheesh, Fee, I'm impressed! And hungry. I love smoked turkey on rye or pumpernickle with good mustard, provolone and roasted red pepper and romaine. I'm getting some great ideas here. Keep them coming!

    Edit: That mayonnaise story just pissed me off. Makes me want to never buy Hellman's again.

    Ummmm... Mushroom soup? Maybe that's not such a good idea. Heck, I just learned gorgonzola is a kind of cheese. I thought it was one of those Muppets.

    I used to make this one a lot when I was a short order cook many years ago.

    smoked turkey, swiss cheese, creamy cole slaw, and 1000 island dressing grilled like a reuben

    Be still my heart...Fiona mentioned smoked salmon. I looooooove smoked salmon, but the
    cost of good salmon fillets here is outrageous. Apparently, rivers that have dams are
    destroying spawning habitat. Damn! SS fillet with a caper sauce on a bed of lettuces
    is pure heaven.

    Where is this deli and how can I get there???!!! Hurry, I'm starving!

    I can eat my weight in bruschetta, especially this time of year. And cucumbers. Not together though.

    MJ, I figure we have a few more years here to finish the house since we're doing it without a loan and the cafe has a little more than 2 years on the lease so it works out perfect! If we're doing good than we might even stay for another 3 years (that's the contract, 3 years at a pop) so we can go down with a little more money but we'll see what happens.

    You guys have given me lots of great ideas! Today I have to talk them over with the wifey and we'll pick some and try to make up a menu! Thanks everyone, especially Dale! :poke:
