This is fascinating! What is that long part that every angraecum have? Also that is quite wonderful setup right there. Is that just stone and sphagnum moss?

I think you are talking about the nectar spur, which is a part of lip. Plants want to have an efficient pollinator (i.e. the pollinator which will reliably deliver the pollen to conspecific individual), so they use the spur to limit who can access the reward.
